The landscapes of Espédaillac have been largely shaped by sheep farming. The Caussenarde breed of sheep, known as "ewe with glasses", is particularly representative of this territory.
The landscape of the Causses of today was mainly born in the 19th century, in a period of demographic apogee but also of sheep breeding and vine growing. Typical village of the Causses, Espédaillac was also the center of the ewe fairs until the middle of the XXth century. Therefore, the village is drawn around an old center, installed around its church, then the succession of three coudercs. These communal spaces devoted to the herds were concentrated around a laquet, a dug water point.
